First I pre-cooked some chicken breasts. I set them aside and then, so I didn't have another pan to clean, um, I mean, to add flavor, I cooked the spaghetti in the chicken water. Then drain the spaghetti.
Add the chicken that you cut/shredded into small pieces while the spaghetti was cooking. Oh, I didn't tell you that? Yea, multitask :)
Then add a can of Cream of Chicken Soup and cut the heat on the burner to medium.
Then a can of Rotel Tomatoes. Yea, this is the part where I realized we didn't have any so we made a quick trip to Dollar General. Ok, break time over... add the tomatoes :)
Ok, our family's greatest Secret Weapon. Well, I guess it's not secret anymore since I'm about to tell you. Tony Chachere's Cream of Mushroom Soup Seasoning. I DISLIKE (I won't say hate because I'll eat it if I have to) Cream of Mushroom Soup. The canned kind, because it has those chunks of mushroom in it. Blech! And when I was younger, if my mom didn't pick out the mushrooms, I spent half my dinner time picking out mushrooms. Until we discovered this seasoning. No chunky mushrooms, all the great taste! You add 1/2 cup of seasoning and 1 1/2 cup milk to recipes. You could use Cream of Mushroom soup though too. You'd probably want to add a little milk to reach your desired consistency.
It makes this pretty liquid-y. But that's what makes a GREAT sauce!
Then I cubed some Velveeta cheese (about 1/3-1/2 a block) and added it to the pan. My friend, Nichole, helped take action shots while I cooked. Try not to be jealous of my magic cheese... well, the camera put a haze around it so it looks magic :)
Stir the cheese in and let it melt some. I was going to let it melt all the way but then I got impatient and figured it would finish melting in the oven. Oh, BTW, preheat your oven to 350.
Then I put the mixture into a casserole pan and topped it with Dorito pieces.
Then we added MORE cheese... shredded cheddar, on top.
Tossed it in the oven until the cheese got all nice and melted on top :)
See how oooey-gooey good it looks? Oooopps, you can see where I snuck a chip.

Seriously, there was NOTHING left. Normally, we have some leftovers. But not tonight! Pretty much everyone went back for seconds! A HUGE success!
