First I found this recipe for Taco Pockets. I thought to myself, I'll have to try those! And then I found one for a Taco Dip and I knew it was fate... we were having MEXICAN for dinner! I called my mom with a list and she ran by the store on her way home.
The first recipe I found was the Taco Pockets from Aunt Peg's Recipe Box (you may remember her from Spotlight Sunday). I followed her recipe exact and used homestyle biscuits. It was SOOO YUMMY! I LOVED THEM! It took me a while to get the hang of filling them (without making a huge mess) and they look pretty funny but they were GOOD! Be sure to check it out! Here's a few pictures of mine:
The second recipe is from Making Memories... One Fun Thing After Another for a Touchdown Taco Dip. Talk about DELICIOUS! I've always loved taco dips but never made one of my own. This was the perfect opportunity! I added a layer of refried beans over the sour cream layer and used lettuce instead of cilantro (I'm not a big cilantro fan). It was a BIG hit with me and my dad!
