
First, brown some ground beef. You can drain the grease or not, depending on your preference. I left a little for flavor.

Now we add the canned stuff. Be sure not to drain anything. That's what makes it "soupy". Add a can of black beans,

a can of kidney beans,

a can of pinto beans,

a can of corn,

and a can of diced tomatoes. See how it's getting the juicy, soupyness now?

Now add a packet of taco seasoning.

And stir. It smells so delicious already!

Bring it to a boil for about 15 min or so. You may want to test taste and adjust the flavors as necessary, like if you like it spicier or something.

Serve with tortilla chips, sour cream, and cheese. We were out of shredded cheese, but I did add some small pieces of Velveeta and it made it creamy and good too! Sorry, the sour cream looks funny because it started melting as soon as I dolloped it on.

Debra, at Happy to Be Home, shares a yummy recipe for Roasted Chicken, where the leftovers can be used to make a Shepherd's Pie. I love the way she makes this, using vegetables to make a rack for the chicken to cook on!
