I had some leftover cooked rainbow rotini pasta that I needed to find something to do with. I googled a little bit and found this recipe over at Allrecipes.com. I used this as the base for my recipe and tweaked it to make it my own.
First I already had my rainbow rotini pasta cooked (about 3 cups).

I also sauteed a sliced onion in 1 tablespoon of olive oil.
I mixed 1 beaten egg and 1 cup shredded mozzarella cheese with the pasta.
I put that in a casserole dish and baked at 350 degrees for about 20 minutes.
For this next part you can use canned pasta sauce or make your own.
I didn't have any spaghetti sauce so I improvised. I mixed a small can of tomato sauce, a can of tomato paste, a bit of water (to thin it out), some garlic powder, and oregano.
I topped the baked pasta with the sauce, then with another cup of cheese.
Bake this at 350 degrees for another 15 min or so.
